Gluten Free Banana Bread

I love making banana bread or muffins, it’s one of the first cakes I remember making as a child and always feels like a comfort food to me.  I sometimes buy bananas just to secretly leave them go brown so I’ll have to use them up and make more banana bread.

This recipe has no gluten, sugar or dairy in it but you can play around and add honey or agave nectar with the bananas or swap the dark chocolate for milk or white chocolate for a added sweetness.

 

All you’ll need is 4 bananas, 4 eggs, 1/2 cup coconut flour, 1/2 cup nut butter, 4tbs coconut oil, 1/2 tsp cinnamon, 1tsp baking soda, 1tsp baking powder, 1tsp vanilla extract, pinch of salt and 6oz dark chocolate

Grease and line the base of a 9″x5″ loaf pan

Pre heat the oven to 175°C or 350°F

Mash up the bananas, I use a potato masher but you can use a fork, beat the eggs and add to the bananas along with the coconut oil (melt in the microwave for a few seconds so it combines well) add the vanilla and nut butter. Mix well till everything’s combined, it’ll be slightly lumpy

Add the coconut flour, baking soda, baking powder and salt

Mix well

Fold in the chocolate chunks gently

Pour into  to the loaf tin and spread it out evenly, tap it on the counter a few times to fill the corners and get rid of the air bubbles

Bake in a pre heated oven for 50-60 minutes until a toothpick inserted into the center comes out clean

Allow it to cool in the loaf tin for half an hour before transferring it to a wire rack to finish cooling

Ingredients

  • 4 Bananas mashed
  • 4 Medium Eggs
  • 1/2 cup – 75g Coconut Flour
  • 1/2 cup – 140g Nut Butter
  • 4 tbsp Melted Coconut Oil
  • 1/2 tsp cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • Pinch Salt
  • 6 oz Dark Chocolate Chips or chopped

Method

  • Pre heat oven to 175°C/350°F
  • Grease and line a 9×5 inch loaf tin
  • Combine banana, eggs, coconut oil, vanilla and nut butter till fully combined
  • Add flour, cinnamon, baking soda, baking powder and salt and mix well
  • Fold in chocolate chunks gently
  • Pour into greased tin and spread evenly
  • Bake in pre heated oven for 50-60 minutes until toothpick comes out clean
  • Allow to cool for 30 minutes in tin then finish cooking on wire rack
